How to make Chhole Bhatura

Step 1 Pressure cook the chickpeas
For chole preparation, soak the chickpeas overnight in water or for 6-8 hours. Next, heat a pressure cooker over high heat. Add the soaked chickpeas along with 1 tea bag. You can also add 2-3 tea leaves to the pressure cooker and wrap it in a towel. The chickpeas should be cooked for about 15-20 minutes. (Note: The colour of the gravy will be changed by the tea bags or the tea leaves. It can cross from darkish brown to black.
Step 2 Saute the onion
Heat some oil in a small saucepan while you wait. The cumin seeds and the sliced onion should be added to the pan. Sauté the onion until golden brown. Next, add minced garlic and ginger, and then add onion paste. Sauté the ingredients until they are fragrant. Then add the tomato puree
Step 3: Add spices to the chole and cook it
After the oil has been separated, add turmeric and red chilli powders, coriander powder, and chana masala. Continue to cook the tomato-onion mixture 2 minutes more, then add the cooked chole. Mix the masala and the chickpeas well. Salt it and let it cook for a few more minutes. Now the chola is ready! Garnish with chopped onion or coriander leaves.
Step 4 Make the dough
Make the bhaturas by combining all-purpose flour, Maida, wheat flour, or atta on a dough-kneading platter. Add oil and salt to the mixture. Combine well. Mix the flour with the yogurt and then knead it well. Add a little water to the flour mixture and knead it. Cover the dough with a kitchen towel once it's done. Let it rise for at least 30 minutes.
Step 5: Cook the bhatura, and then serve it.
Put a kadhai over high heat. While the kadhai is heating, mix equal amounts of dough and roll out large puris (bhaturas). Once the oil has reached a high temperature, add the bhaturas to it and fry. Continue with the remaining dough. Take a plate and serve Chola Bhatura hot!
